Rainbow-Cake

Good dayy bubs:)! It's been quite awhile..cause i got bumped into a freaking cold..and had myself sounding like a base guitar! Anyways soo much better now by the grace of God. So today I'm bringing u the ever famous Rainbow Cake. My rainbow like cake dosen't have all d 7 colors..cuz i dint have those edible colors. So stuck with the 4 i had,nonetheless it was deliciousss. Plus the method is pretty much d same,more colors means double the recipe and add any color. This was super duper yummy with a cream cheese filling,butter cream coating and so much confetti .Mmmm ahh ah Okayy ok let's move straight on to the recipe. But let me say this is a very time consuming recipe so if u have d patience goo for it..u'll never regret...Cause there's always a rainbow after the rain(my saying*):D



Ingredients:
  1. 960g Vanilla Cake flour (i used the 2boxes Pillsbury vanilla cake mix micro-oven and 3 boxes pillsbury vanilla cake mix pressure cooker..not any difference..had to get it cause my nearby grocery store dint carry it all,i added all into the same bowl and added all the ingredients as prescribed at the back of the box.Makes no difference at all.)
  2. 4 Eggs
  3. 320ml Milk
  4. 136ml Vegetable oil
  5. 200ml water 
  6. 18cm spring form pan








Method:


1.Mix the cake flour with eggs,oil and water as described at the back of the box.Mixing with a spatula is the best method.Fold,Flap and Mix..keep repeating this for about 4-5mins until all the ingredients are thoroughly mixed.

2.Then separate the batter into the no of colors you want your cake to be.I mixed 4 different colors,so separated the batter in four different bowls.

3.The baking process.Pour each of the separate batter and start baking.

4.I always place my pan in the center row to allow even cooking.The timing may vary according to the grill we own.I baked each batter for about 18-20mins at 230°.

5.Once the batter is cooked,remove it from the spring-form pan and allow it to cool completely.Repeat the same process for all the batter you have colored and kept.

6.Now after it's cooled,trim the top parts of the cake for even application of the cream and to layer it on top of each other.

 


7. Now time to make the cream cheese frosting to apply inside each cake layer.Next the butter cream frosting to go all over the cake.

Cream-Cheese Frosting: Ingredients:
  1. Cream cheese (I'm using the britannia cream cheese)
  2. Confectionery sugar/icing sugar.
Method:
Empty the cream-cheese box and add the icing sugar to in parts and mix it.
To 180g(full box) of cream cheese add 150-180g of icing sugar. Mix it until the mixture turns out soft and creamy. Cream cheese mixture is ready now.


BUTTER CREAM FROSTING:

Ingredients:


  1. Confectionery/icing sugar
  2. Butter(unsalted)
  3. Vanilla extract
  4. Pinch of salt
For this cake i used around 350g of icing sugar,200g of butter,a splash of vanilla extract and a pinch of salt(salt makes anything sugary equally balanced).Mix everything together,until the mixture is completely combined with soft peaks.




8.Apply the cream cheese mixture inside each of the cakes.On the top(flat layer) and to the sides and refrigerate them for about 15mins. This refrigeration part will help set the cream layer..so that it becomes easy to apply the butter cream mixture over.


9.Now its time to crumb coat and chill.Apply 1st thin layer of butter cream frosting to each of the cake and refrigerate them for 20-25mins.


10.After crumb coat and chill..apply the 2nd and final layer of buttercream frosting to the whole cake using a spatula or a knife.Once your happy with the coating,let it sit in the fridge for an hour or so.


11.Throw in the confetti.Decorate.Party.Enjoy the Ranibow!!
